Sunny days, 10lb wall & syn free risotto #13
I’m sitting in the sun in my best friends garden writing this and I couldn’t be happier about that. 26 degrees in London today and it’s giving me life after all that bloody snow!!
So quick update on the ol’ diet. The week I got back from Cornwall, I’d lost about 9.5lbs all together and that’s usually where I stop, it’s usually my absolute nemisis. I swear I’ve lost and re-gained the same 10lbs for the last 5 years. So anyway, I was determined this wasn’t going to be the end of it so I went IN and started swimming, I went 4 times that week and was so proud of myself, stuck to the diet really well and I was so sure I was going to smash the weight loss. Weighed myself and I maintained. I got on and off them damn scales at least 7 times. I was so gutted!! I posted about it and everyone seemed to reassure me that in the first week of exercising you gain muscle etc so it made me feel abit better.
The next week I went swimming 5 times, again stuck to it really well and lost 2lbs. To be completely honest I was still a bit disappointed. I know that’s actually a good weight loss but I really thought swimming would help the weight come off quicker. Weigh day was the first day of star week this week so I was super bloated, I’m gonna blame it on that and hope that this week will be one for a bigger loss. Fingers crossed. I’m happy for my body to change and gain muscle if I’m losing fat etc but it really is so disheartening when those numbers don’t decrease the way you want them to.
I think if I wasn’t posting it every week or blogging about it, I think I would have fallen off by now. Its really helping me carry on and everyone’s comments are spurring me on. Thank you all for being so nice to me and for my family and boyfriend for still being supportive even though this is my 78th attempt at losing weight. It’s amazing to hear from old friends etc that just wish me well. I love it. Love you all.
I’ve been posting some food pics on Instagram too. I’m quite fussy about making my food look good because it kind of makes me forget that I’m on a diet if it actually looks appetising 😂 I posted a picture of a salmon risotto & a few people messaged to ask for the recipe so I thought I’d add it on here for anyone who cares!!
Ingredients:
Arborio rice - about 250g is usually enough but I don’t measure!
Vegetable stock 800ml
Salmon - however much you wantttt
Parsley - definitely optional
Leeks - I usually use 1
White wine 100ml
Fry light
Recipe:
*Make up vegetable stock, I probably use about 800ml of stock, for this id use 4 stock cubes but you can use less if you don’t want a too intense flavour.
*Cut leeks & fry off in fry light.
*Add in rice & cook for a few minutes until opaque looking, don’t cook grains for too long or they will burn.
*Add in 100ml of white wine and cook until it’s dissolved into the rice.
*Add in stock slowly, cook on low until it’s almost dissolved, keep stirring so it doesn’t stick to the bottom. If you use all the stock and the rice still tastes crunchy, just make up some more and carry on cooking.
*I actually normally cooks salmon fillets for this but I only had smoked salmon at the time. Either tastes good!
*Cut up salmon and plop ontop of the cooked rice then sprinkle on your parsley or whatever herb you fancy.
Add a squeeze of lemon to add a fresher taste too!
*When I make this with salmon fillets I cook them in lots (I literally mean like half a bottle) of soy sauce & add in garlic and ginger and put them in foil in the oven before I start anything. When they look done they usually look quite pale so I’ll drizzle on honey (don’t forget to syn that) and grill for a couple of mins, it adds colour and tastes so good.
*you can miss out the wine if you don’t want to add any syns, I think it adds to the flavour but each to their own.
And that’s it really. Takes about 45 mins and is super yum!
